if not, and the gold is in or can be made into a like z shape, then he can just cut it diagonally twice

Since they have to be parallel cuts you cut it like this...

One cut so you cut one pound off, then the second cut is cutting off 2 pounds. You are now left with a 1 pound, 2 pound and 3 pound block.

On the first day he puts on the 1 pound block. The next day he replaces it with the two pound. The next day he replaces that with the 3 pound. On the fourth day he adds the one pound block. On the fifth he takes off the one pound and ands the two pound. On the sixth he puts the one pound block back :)
