The Stats come from Champion data and trying to find the definitive list is virtually impossible Here is some info but does not completely answer your question:

The Champion Data Difference
Unlike other games, Herald Sun TAC SuperCoach PRO uses Champion Data's exclusive stats system to assess each player's contribution to your team. At the end of each match, Champion Data will calculate players' final ranking and this score will be added to your team's total.
By using Champion Data's comprehensive rankings system of over 50 different stats, player rankings are the most accurate way to determine how effective a player has been. You can be sure that a high-scoring player is giving his team maximum value. Unlike other stats systems, Champion Data will not simply award a point for each kick, mark or handball. For example, while other games will award points for a kick no matter how far it goes or where it's directed, Champion Data will award zero points for a kick that travels less than 40 meters to a contest.
Instead, teams of trained statisticians will assess the state of the game, the pressure on the player and the result of a disposal or possession to determine a score for that action. In many cases, players will lose points for a disposal or action that allows their opponents back into the passage of play.
The main ways for your starting 22 to earn points for your SuperCoach team are listed below. Due to the large number of factors affecting scoring, we cannot publish the full system.

End-of-match and final scores
While end-of-match scoring for your team and your league's opponents and participants will be available during the round, scores and rankings are usually updated, confirmed and finalised within a few hours of the last game of the round.
In certain circumstances, due to the complexities involved in the large number of statistics that are provided and processed, delays may occur. Please allow up until 3:00pm AEST on the day following the completion of the round for scores to be processed.
Scores are final once completely processed, at which time the competition will be re-opened for team editing for the following round.

CD tinker the scoring system every year to account for game trendsim pretty sure, have not heard anything about this though but its not a big deal.
