Ok well this is how I see the 2 different options you and I have offered.
First yours:
Givet for Elmahomady (Elmahomady playing on the right wing in a team that is keeping clean sheets will score far more points than Givet who is playing left back in a team that will struggle to keep clean sheets or score many)
Nolan for Nani (Nani one of the best midfielders going around at the moment, can score from anywhere and creates goals for others, plus has added consistency to his game. Nolan is one of Newcastles better players, but wont score nearly as well as Nani most weeks)
Scholes for Henderson (Scholes is getting old so wont play every week, in the games he does play he will often come off the bench or be subbed at some point. Henderson is an exciting young player who has done well so far)
Round up - majorly one sided for the team gettting Nani, Elmahomady and Henderson

Now my suggestion
Arteta for Nani (Already mentioned what Nani is capable of. Arteta is still a very good player though and will get many points but Nani will outscore most weeks as United are a stronger team)
Bent for Davies (Bent is the better player here, but Davies is still a consistent scorer and with Elmander doing well can get some more assists)
Round up - pretty even, one team loses a good midfielder but gains a better striker, whilst the other team loses a good striker but gains a better midfielder

Sounds Good CF expect Malouda and Arteta are the only 2 players which are completely locked.

I'll do Nolan for Nani, Bent for Davies and Givet for Johnson
