NB: With option 1 going McEvoy leaves me about $40k+ in the bank. I could afford to turn McEvoy into Leuenberger, Kruezer or NicNat

Option 1 easily. Grundy is a terrible pick IMO, and while Macrae could be a good chance for a breakout year, you only have the 1 keeper in Griffen. Whereas with the first option, you have keepers in Sloane and whoever you go with in the rucks (I would prefer Leuey or NicNat).
