Starting 3 rookies in my midfield and 4 of the rookies are Giants.

Is this too excessive?

I cant see too many rookies in the mid with good Job Security apart from the Giants Rooks.

Shield, Coniglio, Smith etc etc

Not really. They'll all be gone by the time the byes come around. And as you said the giant rookies are some of the best options.

Simple answer: Yes

I have 2 GWS mid rookies.

Jukes

4 is excessive; I have two (Coniglio and Kennedy)

I think its a must to have Shield, he has had his appendix out so thats why he hasnt played, but apparently is almost ready.  I'm not wasting trades bringing him in in round 3-4, I'll grab him from the start.

I plan to cash most of them in around the bye.

I cant see too many other decent mid rookies that will play consistently.

Any ideas?

No it is not excessive. After they fatten up downgrade one for another rookie from another team and upgrade the other to a premo. Now you only have 2.

exactly the plan.

I've only got 3 prems in the mid and used the cash to have 5 prem def and fwds.

Coniglio will turn into a prem before rd 11
