Can someone explain to me the whole rules about when do the players scores start affecting their prices, and just the general rule around this.. I'm not 100% on it :P

Players score is always calculated using a three week rolling average, and this changes how great their price drop/hike is

After  their third game their price changes. It's all about their breakeven. I'm not sure how the break evens are made but if the player scores over their break-even then their price goes up, the higher they score over their break-even the more their price will rise, it works the same the other way. If the player scores then than their break-even then they will go down in price, the further away from the break-even the more their price will drop. Assistant coach is good, it shows all the players break-evens. I believe fan footy and various other places do aswell.

If you ever see someone mention b/e then they are referring to someone's break-even.  :)

How much a player will drop or increase depends on the magic number and the break-even. Break even is how much a player needs to score in order to remain at the same price. This is calculated by taking their price and dividing by the magic number
Example: Dane Swan
$688,100
Magic number 2013: roughly 5150
Roughly 133...
But trust me the magic number is more complicated than this
